Chicken Afritada

| 1 | pound | chicken, cut into serving pieces |
| 3 | pieces | pieces potatoes, peeled and halved |
| 1 | piece | red onion, diced |
| 6 | cloves | garlic, minced |
| 1 | piece | green bell pepper, sliced into strips |
| 1 | piece | red bell pepper, sliced into strips |
| 1 | piece | medium size carrot cut same size as potato |
| 2 | cup | chicken stock (broth) |
| 1 | cup | tomato sauce |
| 3 | pieces | bay leaf |
| 1/4 | cup | patis (fish sauce) |
| 3 | tablespoon | cooking oil |
| Procedure | ||
- In a cooking pot or wok, heat oil.
- Sauté garlic and onions.
- Add chicken turn into slightly brown.
- Pour the tomato sauce, fish sauce and stock. Bring to a boil and allow to simmer for 20 minutes or until the chicken is almost cooked.
- Add potatoes and carrot continue to cook for 10 minutes or until the potatoes are cooked.
- Add the green, red bell peppers and bay leaf, simmer for an additional minute or two.
- Salt and pepper to taste. Serve this dish hot with steamed rice.
